If you’ve managed to buy some flour, why not try out this Easter Bread, courtesy of Gillian Geraghty?
Grease 1 x 2lb loaf tin
Pre-heat oven to 375F, 190C, gas 5
8oz (225g) plain flour
2 tsp bkg powder
1/4 tsp mxd spice
1/2 tsp cinnamon
3oz (75g) butter or lard
3oz (75g) sugar
2oz (50g) chopped dates
2oz (50g) sultanas
1 egg, well beaten
Method:
* Sieve flour, bkg powder, spice and cinnamon into a bowl
* Rub in butter or lard, until resembles fine breadcrumbs
* Add sugar, dates and sultanas
* Put mixture into the greased loaf tin, bake bottom of oven for 30minutes
* Reduce heat to 350F, 180C, gas 4 – further 30 minutes
